Isn’t there a limit of how many players another club can sign from a team in the same league?
Surely they’re not our players once the season has ended as they’re non-contract or not on a contract that has yet to end?

You may be right, but I thought there was a specific rule from the southern league that players could only move clubs every three months or so, which would in effect stop one club raiding another for three or four of their players, but maybe I misread it.

You're right, but that only applies during the season when players are registered to clubs. From the end of the season until the registration window opens in July, players are free agents and can therefore sign for whoever they like. This only applies to non-contract players of course, or players who's contacts have now expired.

Come 31st May no club has any players and can't have any until 1st July, unless they are under contract

Not a former player, but we’ll see our old mate Paul White this coming season, who has signed for Coalville.
